Bake the apple cake for 35 to 45 minutes at 325 degrees F. Prepare the frosting, then spread it onto the cake once it has cooled.


Make the glaze: As the cake cools, prepare the brown sugar glaze. Combine the butter, brown sugar, heavy cream, and pinch of salt in a medium saucepan over medium heat. Stir constantly until the butter has melted, and then stop stirring and let the mixture come to a rapid boil. Boil for 1 minute.


Spoon the mix into the tin, spread evenly onto the base and press down. Place into a fridge. In a double boiler gently melt coconut butter, leave to cool down. Stir in maple syrup, vanilla and cinnamon. Quarter and core the apples, place into blender or food processor with lemon juice and blend until smooth.


Preheat oven to 350°. In a large bowl, beat the sugar, oil, eggs and vanilla until well blended. Combine the flour, baking powder, salt, cinnamon and baking soda; gradually beat into sugar mixture until blended. Fold in apples and walnuts.
